Palate: Stewed plums are dusted with charcoal, sweet and sour cherries, molasses and soft oak spice. Ginger cake and chocolate-covered crystallised ginger provide a backbone of sweetness countered by rich riverbank earth.
Finish: Polished oak, sticky jam and allspice mixed with brown sugar.
